Since 2001, executive chef Pete Dressen has taken a hands-on role in creating innovative American cuisine for Walden guests, helping Inn Walden to earn AAA’s rare 5-diamond rating.
Chef Dressen was lured into the culinary world when his passion for good food was recognized at an early age. As the grandson of a grocer and dedicated Texas “chow hound,” Chef Dressen was introduced to the superior flavors and pleasures of seasonal eating by way of the abundant ripe fruit and fresh vegetables found in his grandparents’ kitchen garden.
He went on to graduate from the California Culinary Academy in San Francisco, where he learned to develop his own unique style and flair.
He continued with his career at exclusive restaurants, clubs and hotels such as Ritz-Carlton Buckhead, Pierre Gagnier (a three-Michelin starred restaurant in France), Peachtree Club and Pasatiempo.
Pete’s culinary philosophy and passion reflect the growing trend towards a healthier and down-to-earth lifestyle. Working with neighboring farmers to seek out the finest in regional and local organic produce is the essence of his cuisine.
Pete’s preference is to allow the natural flavors of the highest-quality ingredients to express themselves.
In addition to cooking, Chef Dressen’s passion is to develop younger chefs to discover their own talents in the same way that he was encouraged. Be it through mushroom picking or traveling to some of the world's finest restaurants for a chance to gain knowledge, Pete believes whole-heartedly in staying active, continuously learning and always having fun.
