Col. Bill Newsom's Aged Kentucky Country Ham

Our hams are being cured for another season.

A product widely known by many food editors and connoisseurs, this aged ham is among the last of its kind -- a “lost art” to which the commercialized methods of today cannot compare. The curing method was obtained from an old family will dating to the 1770s. Curing involves a combination of time and know-how. Ingredients of salt and brown sugar are rubbed into the ham by hand. Hams are hand-washed and hung to be smoked with hickory wood. A slow, curling smoke bathes the hams to add flavor. After many months of aging in the changeable Kentucky climate, the recipe produces an unusually delicious aged meat.

Each Colonel Newsom's Aged Kentucky Country Ham is handled a total of 18 TIMES before being packaged to ship to your door.

Because Colonel Newsom's hams are limited in number with each crop, each whole ham has a numbered certificate to authenticate the product and denote the handcrafted originiality of the Newsom's process.
